Beef is produced from our pedigree Sussex herd. All feed is produced on the farm. 25 cows calve in spring and 15 in the autumn. The calves are left with their mothers long enough to wean naturally. Cattle then grow on slowly without any concentrate feed. The beef is hung in our cold store in the traditional way for about 3 weeks. Registered with The Soil Association, the farm has been running for 5 years. Sussex cattle have evolved over hundreds of years from the red cattle that inhabited the forests of the Weald at the time of the Norman conquest. The Sussex breed are very efficient at converting natural foliage into high quality beef with fine texture and outstanding flavour. |
